Kennedy Kids Foundation 5K – Miami, Florida
The Challenge
The Kennedy Kids Foundation planned a large community 5K event in Miami, attracting thousands of runners, volunteers, and spectators. Beyond the race itself, organizers wanted to provide meals that would keep staff energized, volunteers appreciated, and participants supported throughout the event.
Traditional catering services quickly proved unworkable. The event required feeding multiple groups at the same time, with service periods compressed into short windows. Lines had to move quickly to prevent bottlenecks, and the operation had to be set up outdoors with limited infrastructure. Organizers needed a partner capable of scaling up to meet both the volume and pace of a high-energy public event.
The ECS Solution
ECS deployed a modular mobile kitchen system, configured for speed and efficiency. By setting up parallel service lines, we were able to separate food stations for runners, volunteers, and event staff. This kept wait times short and ensured each group received meals tailored to their role in the event.
Our setup included:
- High-Throughput Service Lines: Capable of handling 500+ plates per hour.
- Multi-Point Distribution: Dedicated lines for staff, volunteers, and participants.
- Outdoor Event Support: Weather-rated tents, hand-washing stations, and lighting.
- Flexible Menus: Options that worked for both quick grab-and-go and sit-down meals.

Results
Throughout the event, ECS kept food service smooth and uninterrupted. Volunteers were fed on time, staff had reliable access to meals, and participants were able to refuel quickly without long waits. The operation blended seamlessly into the event, supporting the organizers’ goal of a positive, professional experience for everyone involved.
Impact
- Successful catering for a multi-thousand person community event
- Parallel service lines eliminated bottlenecks and delays
- Meals delivered to multiple groups simultaneously (staff, volunteers, runners)
- Capacity to scale to 10,000+ meals per day for major events and relief efforts
ECS showed that large-scale catering isn’t just about volume, it’s about delivering efficient, dependable service that keeps big events running smoothly.
